So many of us deal with ailments such as indigestion, nausea and common cold and ginger is the one stop shop providing remedial effects to deal with these health issues. Jaggery on the other hand improves immunity and cleanses the body as it is packed with calcium, magnesium, iron, potassium and phosphorus.
One effective way of combining these two powerhouse ingredients is in the form of ‘candies’. Yes, you can make delicious candies that you and your loved ones can enjoy while managing cold, cough, nausea relief, sore throat and gastric issues.
Step 1: Chop the peeled ginger and coarsely grind it using a mortar and pestle. Put the mushed ginger in the sun to completely dry it out. Once dry, pulse it in the mixie until you get a powder.
Step 2: Take a cauldron and add jaggery powder (save a handful for sprinkling it on the candy later), powdered ginger, clove powder,black pepper and water.
Step 3: Keep sweating the ingredients on a medium flame and allow the jaggery to completely melt. The texture of the ingredients should start to look like a syrup.
Step 4: After stirring the ingredients for 2 to 5 minutes, switch off the flame and let the syrup rest for about a minute.
Step 5: Now, take a chocolate mould or butter paper (in case you don’t have a mould) and add the syrup to it one spoonful at a time. Remember to grease the mould or butter paper with some ghee.
Step 6: Let the syrup completely cool and then sprinkle some powdered jaggery over the candies.
Step 7: Store the candies in an airtight container in a cool and dry place or a refrigerator for an hour. After an hour, your healthy candies are ready to be enjoyed!
Although these candies have medicinal properties, their sweetness makes them palatable for kids as well. You would also find that the texture of the homemade ginger and jaggery candy is far better than the ones we get in stores. A few pointers to keep in mind is that when choosing the ginger, ensure that they are tender. Moreover, clean them thoroughly as it is a root and scrape the skin off entirely before turning them into a powder.
To achieve consistency in the texture, quickly create the droplets to the mould or butter paper as if you will let it rest at room temperature for longer durations, the texture might become too soft.
Also, the part where you use ghee to grease the mould/butter paper is important as the candies might stick to the surface, making it difficult for you to extract them out.
