We’re inching closer to feeling the winter chill, and it’s the perfect time to start savouring soups. They not just bring warmth to the body, but depending on the ingredients, they can also be a part of your healthy weight loss diet. Tomato, lemon coriander, hot and sour, lentil, chicken, lamb – there are a variety of soups you can gorge on. But one personal favourite winter delight is a hot bowl of mushroom soup.

Of course, we like a thick and creamy mushroom soup, but an equally scrumptuos version can be made at home minus the excess fat. Just before the cold winds strike in full glory, let me share how to make mushroom soup without cream!

How to make mushroom soup without cream

1 pack of mushrooms chopped
1 big onion chopped finely
1 tbsp butter (you could even use olive oil if you want)
12 garlic pods chopped
1-1.5 cups milk
1/2 tbsp cornflour
Salt to taste
Pepper to taste
1 tsp oregano

Procedure to make mushroom soup
1. Take a heavy bottomed pan, and add butter or olive oil depending on your preference, once it is hot.
2. Add chopped garlic and saute for 2 minutes, before adding chopped onions.
3. Once the onions are slightly cooked, add the chopped mushrooms.
4. Add salt, pepper and oregano to the mushroom mix and and allow it to cook for 5-7 minutes once you cover it with a lid. It may leave some water, but that’s nothing to worry about.
6. Blend this into a mixture with thick consistency.
7. Take half a tablespoon of cornflour and mix it with half a cup milk. Make sure there aren’t any lumps.
8. Now on low fire, add the milk and cornflour mix to the mushroom mix. Keep moving the ladle to ensure it is lump-free. Also, keep the flame low because you don’t want the milk to curdle!
9. Depending on the thickness of soup you want, add some more milk to the mix. 10. Pour the soup in a bowl, sprinkle a little pepper, garnish it with mushroom slices and coriander if you want. Serve hot with toasted garlic breads!

Mushrooms are low in calories, carbohydrates, fat, and sodium.
