Sugarfree Rasmalai Recipe For Diabetics

Rasmalai is a popular Indian dessert. However, diabetics should avoid eating this delicious dessert because of its high sugar content. But you can still enjoy rasmalai by making it with this sugar-free recipe.

-2 cups low-fat paneer (cottage cheese) -2 tablespoons almond flour -1/2 teaspoon cardamom powder -Stevia or another sugar substitute to taste

For Cottage Cheese Dumplings (Chenna)

-4 cups unsweetened almond milk or skim milk -Stevia or sugar substitute to taste -1/2 teaspoon cardamom powder -Saffron strands for flavor (optional)

To Prepare Sugarfree Rasmalai, Follow These Steps:

Step 1: To prepare dumplings, knead the paneer, almond flour, cardamom powder, and sugar substitute together to form a smooth dough. Now, shape them into flat discs or small balls.

Step 2: Boil water in a pan and gently drop the dumplings into it. Cook until they float to the surface. Remove the dumplings and rinse them with cold water. Squeeze out excess water and set aside.

Step 3: To prepare milk syrup, heat almond milk or skim milk over medium heat. Add cardamom powder, and saffron strands (if using), and sweeten with your chosen sugar substitute. Stir well.

Step 4: Allow the milk to simmer until it thickens slightly and attains a rich flavour.

Step 5: Now, gently place the prepared dumplings into the simmering milk mixture and let them soak for at least 2-3 hours in the refrigerator to absorb the flavours.

Step 6: Once the dumplings are thoroughly soaked, refrigerate until chilled. Garnish with chopped nuts or a sprinkle of cardamom powder before serving.
