*1 tablespoon olive oil
*1 onion, diced
*2 cloves of garlic, minced
*4 cups of chicken or vegetable broth

*Salt and pepper, to taste
*1 tsp cumin powder
1. Heat the olive oil in a large pot over medium heat.
2. Add the onion and garlic to the oil and saute it for 5 minutes or until they turn golden brown.
3. Add the broth, potatoes, and spinach and bring the mixture to a boil. You can also use 4 cups of water instead of the broth.
4. Reduce the heat and let the soup simmer for 10-15 minutes or until the potatoes turn tender.
5. Remove the soup from heat and let it cool slightly.
6. Use an immersion blender or transfer the soup to a blender and puree until smooth.
7. Return the soup to the pot and add the coconut cream.
8. Season with salt, cumin powder and pepper, to taste.
9. Reheat the soup over medium heat until heated thoroughly.
10. Serve hot and enjoy!
