Pumpkin soup might sound like something bland, but that can’t be further away from the truth. Pumpkin soups turn out to be thick, creamy and rich with spices which ends up being a joy for your taste buds!
Apart from being a flavourful dinner option, pumpkin soup is also a healthy choice. Pumpkins are highly nutritious and yet very low on calories which makes it perfect for weight loss. Studies have shown that pumpkin is an extremely rich source of vitamin A, making it great for the eyes and is also packed with antioxidants which keeps our heart healthy.

INGREDIENTS
1 small pumpkin
6-7 cloves of garlic
1 small onion
6-7 cashew nuts
2 tsp olive oil
Salt as per taste
Pepper as per taste
1 cup water
METHOD
Wash and remove the skin of the pumpkin along with the seeds. Chop it roughly and add it to a pressure cooker.
Add the cashew nuts, onion, garlic and water to the chopped pumpkin. Pressure cook on a high flame for about 4-5 whistles.
Once it’s cooked, remove the lid and let it cool down. Then blend it into a smooth purée. Add the remaining water from the pressure cooker and blend it all well.
Take a hot pan and add 2 teaspoons of olive oil and sliced garlic into it. Saute until the garlic turns golden brown.
Garnish the soup with roasted garlic and some pumpkin seeds. Your pumpkin soup is ready to serve hot!
