How to make gond ladoos?

Ingredients:

* 1 cup wheat flour
* 3/4 cup powdered jaggery
* 1/2 cup ghee
* 1/3 cup gond
* 2 tablespoons grated dry coconut
* 1/4 cup almonds and cashews
* 1/2 teaspoon cardamom powder (Elaichi)
* 1 tablespoon white poppy seeds (Chironji)

Method:

1. Take a heavy bottomed pan and heat 1 tbsp of ghee in it. Once the ghee has melted add the chopped almonds and cashews to it.

Almonds will make your gond ladoos healthier and tastier!

2. Fry the nuts until they turn golden brown. Nuts have to be grinded into a coarse texture, so you can either grind them and then fry or you can first fry the chopped nuts, let them cool down and then grind them.

3. Once the nuts are done, add some grated dry coconut to the pan and saute for a minute or two.

4. Take out the mixture of nuts and coconut and keep it aside on a plate.

5. Next, you need to take some clean gond and heat them in 1/4 cup ghee. Don’t confuse gond with gond katira, they are both different. You need to fry the gond until it swells and puffs up. Don’t turn off the heart until they are puffed up.

6. Gond will absorb all the ghee and once that’s done, turn off the heat, let it cool and grind it in a mixer grinder.

7. Again heat up the pan and add around 3 tbsp of ghee in it. Once the ghee has melted, add wheat flour to it and roast it until it turns golden brown and doesn’t taste raw.

8. Roasting wheat flour can take some time and make sure you keep stirring continuously or the flour will get burned.

9. Once the flour is roasted, remove it from the stove and add the fried nuts and gond to it.

10. Also, add some elaichi powder and powdered jaggery. Mix all the ingredients well.

11. Now, just take small portions of the mixture and roll it into balls to make ladoo. If there is a binding problem, you can add some more ghee.

Your gond ladoos are ready to make your winters extra sweet, warm and healthy!
