Ingredients for cauliflower pudding

100 gm cauliflower florets
10 gm butter
30 gm fresh heavy cream
1 tsp vanilla essence
1 tsp stevia

How to make cauliflower pudding

1. Cut the cauliflower into florets. Steam or boil them for five minutes until tender.
2. Drain the water and allow the cauliflower to cool, before blending it until pureed.
3. Heat the butter in a nonstick pan and add cauliflower puree to it. Cook until it loses water and its strong flavour.
4. Add vanilla essence to it and mix well. Add fresh heavy cream and keep cooking till the mixture becomes thick.
5. Add stevia and mix it well.
6. You can have it as a pudding or freeze it to relish as an ice cream later.
