Here are the things you’ll need:

1 kg potatoes, peeled and thinly sliced
Salt and freshly ground black pepper to taste
3 tbsp olive oil
1 onion, thinly sliced
3 garlic cloves minced
1 tbsp mustard sauce
3 tbsp flour
2 1/2 cups double-toned milk
¾ cup grated cheddar cheese
Fresh thyme to garnish (optional)

Here’s how to prepare low-calorie au gratin with potatoes:

Step 1: Preheat the oven to 400F and grease a baking dish with olive oil. 

Step 2: Add sliced potatoes and season with salt and pepper, along with a drizzle of 2 tbsp olive oil and toss well to coat.

Step 3: Place the potatoes in the preheated oven and bake for 15 minutes or until potatoes begin to soften.

Step 4: While the potatoes are baking, heat a pan over medium heat and add 1 tbsp olive oil to sauté the onion and garlic for 2 to 3 minutes.

Step 5: Add mustard and flour to the onion and garlic sautéed mix, pour milk and whisk until sauce is thickened and smooth. Season the sauce with salt and pepper.

Step 6: Then remove the potatoes from the oven. Pour the sauce on the potatoes to form a thick coating.

Step 7: Add cheddar cheese as a topping and let the dish cool down. Refrigerate for 15 minutes allowing it to set.

Step 8: Remove the au gratin from the dish and transfer it to the oven. Bake the dish for 60 minutes at 350F, or until potatoes are golden-brown on top and the cheese has melted. 

Step 9: Garnish with fresh thyme and serve hot.
