There’s a misconception that you can’t eat anything, when you have diabetes. In fact, many people also think that cutting out sweet delicacies will help them prevent the autoimmune disease. One of the first things we eliminate from our diet is dessert. We think that anything sweet will only cause more damage. The truth is that it isn’t exactly the dessert, but the ingredients we use to bake them.
Anything with all-purpose flour and sugar is harmful for health, but using alternative ingredients will ensure you don’t have to compromise on taste or health. Hence, we have for you a very healthy cake recipe made out of sorghum (jowar) and jaggery. Added to it is orange juice for a sweet smell, and a mix of seeds for an extra dose of health.
Jowar may seem like an unlikely choice for a cake to many, but it has multiple benefits which make it the best candidate for times when you have major sweet cravings. It is extremely easy to digest given that it is rich in fibre. What’s more, it is a great option to keep your blood sugar levels in check, because it gets absorbed into the bloodstream slowly and helps you avoid a spike.
So, leave behind the guilt of craving for something sweet, and get ready to bake this jowar cake:
1 cup jowar flour
4 tbsp butter or olive oil
2-3 tbsp cornstarch
1 tsp baking powder
½ tsp baking soda
¼ cup jaggery
1 tsp vanilla essence
½ cup freshly-squeezed orange juice
¼ tsp cinnamon
½ tsp seed mix, optional
Step 1: To begin, mix jowar flour, cornstarch, baking powder, baking soda, jaggery, cinnamon and seed mix.
Step 2: In another bowl, add butter or olive oil. If you want to keep it vegan and keep the calorie count low, you can use olive oil but using butter will definitely add a creamier texture to the cake. However, both the ingredients are equally great! Add vanilla essence and orange juice to the bowl. Whip this mixture using a hand blender, or an electric blender.
Step 3: Now, add half of the dry mixture to this and keep whipping. Once mixed, add the other half of the dry ingredients to the bowl and keep whipping.
Step 4: Transfer this mix to a cake mould, or oven-proof dish. Preheat the oven at 180 degrees centigrade and then place the dish inside the oven for 10 to 15 minutes.
When you’re preparing the cake mix, feel free to use olive oil instead of butter because it is a healthier alternative. Butter does give the cake a smoother texture, especially because jowar becomes a little hard after baking.
Not all that tough to bake, right? This jowar and seed mix cake is a great option for those who want to manage their blood sugar levels. You will, however, need to keep a check on the quantity you’re consuming. Other than that, this is a perfectly healthy dessert!
