They say breakfast is the most important meal of the day. You see, having proper breakfast provides you with a boost of energy to get you through the day. Here’s a healthy recipe to make banana pancakes for a dose of energy boost right in the morning!
1 banana, mashed
1 cup wholewheat flour
2 tbsp olive oil
2 tbsp honey
⅔ cup milk
1 egg
1 tsp baking powder
¼ tsp cinnamon powder
4-5 drops of vanilla essence, optional
Step 1: Start by mixing all the dry ingredients. So, take a bowl and add the whole wheat flour, baking powder, and cinnamon powder to it.
Step 2: In a separate bowl, mix mashed banana, milk, honey, olive oil, egg and vanilla essence. Whisk this mixture using an electric or hand-held mixer.
Step 3: Add the dry ingredients to this mix, and continue whisking till you get a fluffy textured mixture.
Step 4: Place a non-stick flat skillet on the gas stove. Add a teaspoon of olive oil to it. Keep the heat at medium.
Step 5: Now, take a big tablespoon of the batter. For reference, it should be about ¼ of a cup.
Step 6: Spread it a little using a flat spatula. Let it cook a little before flipping it to the other side. Adjust the heat whenever required. The pancake should be cooked till both the sides are golden brown.
Step 7: Repeat with the remaining batter, till you have the number of pancakes you need. The amount of batter will be enough to make four to five banana pancakes.
Step 8: Place the pancakes on a plate. You can add honey on top of them to enhance the sweetness. Feel free to skip garnishing your pancakes with honey, if you’re not someone who has a sweet tooth.
That’s all you need to do to get your plate of banana pancakes ready! What’s more, you can use low-fat milk in order to cut down on the calories. Vegans can use almond milk but make sure to add a whole cup of it. For this recipe, we’ve already replaced butter with olive oil. You can also choose to use coconut oil.
