Here are some easy low calorie, high protein pancake recipes:

1. Oat and cottage cheese pancakes

Ingredients

  • 1 cup rolled oats
  • 1 cup cottage cheese
  • 4 large eggs
  • 1 medium banana
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • A pinch of salt
  • Coconut oil for cooking

Method

  • Blend all the ingredients, but not the oil, until they become smooth.
  • Heat a non-stick skillet over medium heat, and lightly grease it with oil.
  • Use a big cookie scoop to put the batter into the skillet.
  • Cook until you get bubbles, then flip and cook until golden.
