Is winter even winter if you’ve not had at least one bowl full of gajar ka halwa? An integral part of the Indian dessert family, it is prepared primarily in the winters because carrots are a winter vegetable. Many, however, have to abstain from it because of the high number of calories it contains.

In our opinion, no one should have to keep themselves away from this sweet goodness. Hence, we’ve brought you a gajar ka halwa recipe which is low on the calories side but scores high in the taste department. So, enjoy the beloved dessert without compromising on taste or health!

What you need:

-Ghee, 2 tablespoons
-Carrots, grated, 4 cups
-Low fat milk, 4 cups
-Cardamom or elaichi powder, 1 teaspoon
-Honey or jaggery, 3 tablespoons
-Dry fruits for garnishing

Here’s how to prepare low-fat gajar ka halwa:
  1. Heat the ghee in a pan over medium flame
  2. Once heated, add the grated carrots to the pan and stir it for a few minutes 
  3. Once the carrots are soft and the mixture has turned slightly dark, pour in the milk
  4. Slowly stir the contents of the pan over medium flame
  5. Let it simmer for about 20 to 25 minutes on low-medium flame
  6. Once the mixture has turned thick, add elaichi powder 
  7. Next, add honey or jaggery to the mixture. Let the halwa simmer for 5 more minutes on low flame
  8. Garnish the halwa with nuts of your choice for the finishing touch!

This version of gajar ka halwa is made out of low-fat milk. Hence, the fat content per serving is less than 0.5 grams. Moreover, you’ll also find that it has about 2 grams of protein to offer. What’s more, the ingredients we’ve used such as carrots, honey and cardamom have multiple health benefits. The star ingredient which is carrot improves bowel function and is a rich source of essential nutrients. On the other hand, jaggery helps in detoxification and easy digestion of food. 

You do, however, need to keep in mind that overindulging in anything is bad. The same thing stands true for this low-calorie of gajar ka halwa.
