Munching on to our favourite snacks should not be a guilt ridden experience. While it is hard to choose healthy snacks, especially considering that they are supposed to be a quick way to satiate the hunger pangs, there are a variety of healthy options to choose from. One such option is onion rings, which are crunchy and gluten free.

Yes, we know our immediate thought is that they are deep fried, but here we have a healthy snacking option to go with your tea, coffee or whatever you may like!

Onion provides a wide variety of health benefits for hair, eyes, and heart, and contains antioxidants. It is rich in nutrients such as sodium, potassium, folates, vitamins A, C, and E, calcium, magnesium, and phosphorus. According to a study published in the journal of Mediators of Inflammation, onion’s chemical composition helps in immunity enhancement and has anti-cancer properties as well.

A healthy onion rings recipe

For this low carb recipe, we will bake the onion rings instead of using the traditional deep fry method. So, get ready to enjoy a delicious and nutritious appetizer!

Here’s what you will need:

  • 2 medium sized onions
  • 3/4 cup besan (gram flour)
  • 2 teaspoons baking powder
  • 3 eggs
  • 1/2 cups dry breadcrumbs (whole wheat bread preferably)
  • Olive oil
  • Salt, turmeric, and black pepper for taste (½ teaspoon each)

Here’s how you can prepare dry breadcrumbs for this recipe:

Preheat the oven to 250 F/120 C and place crust free bread slices in it for 15-20 minutes. Once the bread has cooled off, break it into crumbs.

Here’s a step by step guide to prepare the onion rings:

Step 1: Preheat the oven to 450 degrees F (232 degrees C) and coat the baking sheets with olive oil.

Step 2: Post peeling the outer skin off and cutting off both the ends, slice the onions into 1/2-inch-thick slices, in the form of rings. Place the rings in a bowl and add cold water to it.

Step 3: Combine besan/gram flour and baking powder and beat the eggs in a separate bowl.

Step 4: In another bowl, add breadcrumbs and season it with salt, black pepper, and turmeric.

Step 5: Take one ring at a time, remove from the water, and coat it in flour. Now, dip the ring in the egg batter and coat in the breadcrumb mixture. Remember to shake off any excess water, egg or breadcrumbs from the onion ring.

Step 6: Repeat step 5 for all onion rings and coat them with olive oil. Bake them for 10 minutes, and turn each onion ring over. Bake for another 10 or till you see a gold brown colour appearing and a crispy texture.
