You could have multiple reasons for going off dairy. From turning to veganism to being lactose-intolerant or simply avoiding all those extra calories, cutting dairy from your diet means you have to say goodbye to cheese. Now whatever your reason may be to avoid cheese, it’s not easy to part with it. After all, cheese adds a dash of creaminess to every dish you add it in!

Fret not, because you don’t have to put yourself through this. We’ve brought you a healthy alternative to cheese that you can prepare right at home! This vegan cheese recipe not just looks like the real deal, but also serves as a delicious and healthy alternative to it. All you need are a few inexpensive and accessible ingredients. 

For all vegan and lactose-intolerant people, this recipe will work wonders as it has the same consistency as a classic cheese sauce. What’s more, it pairs beautifully with nachos, chips, macaroni, pasta and even tortillas.

So, if you are looking for a cholesterol-free, low fat and tasty vegan cheese recipe, then look no further;

Here are the ingredients you will need:

¾ cup peeled and diced potatoes
¾ cup peeled and diced sweet potato
2 garlic cloves
¼ cup raw cashews (soaked)
1 tbsp apple cider vinegar
2 tbsp nutritional yeast
½ tsp onion powder
½ tsp salt
¼ cup extra-virgin olive oil
¼ cup water

Here’s how you can prepare it:
  1. Place the diced potatoes in a saucepan and add cold water to about 1 inch.
  2. Add a pinch of salt to the water, and bring to a boil.  
  3. Reduce the heat, and simmer until the potato is tender, for about 8-10 minutes. 
  4. Drain and transfer the potato to a blender, and add garlic, cashews, apple cider vinegar, nutritional yeast, onion powder, salt, olive oil, and water to it.
  5. Blend the mixture until a smooth texture appears.
  6. Serve with your favourite tortilla /chips/nachos.

Remember to soak the raw cashews for at least two hours, before using them for this recipe. That’s because it will help the cashews to break down easily, while being blended with other ingredients.

What’s more, there are a number of ways in which you can experiment with this basic recipe, both in terms of taste and form. For example, you can add 1/4 to 1/2 tsp of smoked paprika to make the cheese more smoky and spicy. The form of the cheese can also be made firm and dry, using 5 tbsp of agar-agar powder (vegetable-based substitute for gelatine).
