Here’s a recipe of Quinoa Harvest Bowl, a type of quinoa salad, which will make for a perfect healthy lunch option!

A healthy weight-loss journey is about including healthy meals to your diet. What better way to do that by having a lunch with the goodness of fiber in quinoa, antioxidants in green leafy vegetables and various vitamins and protein through avocado and chickpeas?
*Fresh arugula or any green leafy vegetable
*Sprouted pumpkin seeds
*Tahini dressing or any dressing of your choice
First you need to make the tahini dressing for which you need to take 2 tablespoons of tahini (sesame seed paste), 1 tbsp maple syrup, 1 tbsp lemon juice, 1 tsp mustard sauce and some salt and pepper.
Then you need to peel and chop the sweet potatoes into small cubes and roast them in a pan until golden brown. You also need to soak some chickpeas and then roast them until crispy.
Chop up an avocado and you will also need some sprouted pumpkin seeds which you can buy from the market or make them at home.
Take a big bowl and add all the ingredients to the bowl, mix them together, garnish it with tahini dressing and your Quinoa Harvest Bowl is ready to have!
