Who doesn’t love a guilt-free indulgence that packs in both health and taste? Now, that’s pretty obvious, right? Thankfully, we have the perfect solution, courtesy celebrity nutritionist Pooja Makhija, who always makes sure to share healthy recipes that make you drool and how! This time around, her recipe of choice is a high fibre dessert. Any guesses? It is a coconut pie. Before we get down to the recipe, let us tell you that coconuts are high in manganese, which is critical for good bone health and the metabolism of carbohydrates, proteins and cholesterol. Of course, there are several other nutrients it possesses.

Without further ado, let’s get to the recipe. 

Here’s what you need:

Weetabix

Almond flour 

Desiccated coconut 

Lemon juice 

Date paste 

Coconut milk

Coconut yoghurt

Method:

  1. In a bowl, weetabix, almond flour, desiccated coconut, lemon juice, date paste and coconut milk.
  2. Mix them well.
  3. It will be a stiff mixture that you will get.
  4. Make sure to lay it properly in a baking tray and flatten it with a spoon.
  5. In a separate bowl, take some coconut yoghurt and add organic stevia to it.
  6. Mix them well.
  7. Pour this on top of the other mixture.
  8. Refrigerate it overnight.
  9. Dig in!
