We are talking about herby garlic ragi crackers that are not only crisp to perfection but also stand out to be as perfect healthy tea-time snacks. The goodness of ragi is what makes this delight different from the others.

So let’s get started with its easy-peasy recipe:
Ingredients:
60 gms ragi flour
70 gms whole wheat flour
2 tsp mixed herbs
1/2 tsp baking powder
Salt and Pepper to taste
Water to knead the dough
1 tbsp olive oil
Ingredients for topping:
2 tbsp extra virgin olive oil
1/2 tsp chilli flakes
Salt to taste
3 garlic cloves, crushed
Preparation:
1. Dry-roast the ragi flour in a pan till brown.
2. Mix the dry ingredients together—ragi flour, whole wheat flour, herbs, baking powder, salt and pepper.
3. Add olive oil to it and mix.
4. Add sufficient water to knead the dough and let it rest for 20 minutes.
5. Meanwhile, preheat the oven to 180 C.
6. Now take a small portion of the dough and roll it into a thin roti—about 1/8th inch thick.
8. Poke holes with a fork on the roti to avoid the dough from rising while baking, and cut into squares/rectangles.
9. Bake for eight minutes, till they are brown and crisp. Baking times may vary with the oven being used.
10. Once they are done, allow the crackers to come at room temperature.
11. Meanwhile, in a small bowl, mix together the olive oil, chilli flakes, salt and crushed garlic.
12. Brush this mixture onto the crackers and you’re done.
